For the Strawberries:
- 2 cups fresh strawberries, sliced
- 2 tbsp granulated sugar
For the Whipped Cream:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
Instructions
- Prepare the strawberries: Toss sliced strawberries with sugar and let sit for 30 minutes.
- Make the shortcakes: Preheat oven to 400°F (200°C). In a bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the butter: Add cold butter and mix until crumbly. Stir in heavy cream and vanilla until just combined.
- Shape and bake: Form dough into a ¾-inch thick round, cut into circles, and bake for 12–15 minutes or until golden.
- Whip the cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Assemble: Slice shortcakes in half, layer with strawberries and whipped cream, then top with the other half.
- Serve immediately and enjoy!
