Ingredients
1 lb Italian sausage (mild or hot)
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
3 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
½ cup chicken broth or white wine
1 tbsp balsamic vinegar (optional)
1 tbsp fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides. Remove and set aside.
In the same pan, add sliced onions and bell peppers. Cook for 5 minutes until slightly softened.
Add minced garlic, salt, black pepper, and red pepper flakes. Stir well and cook for another 2 minutes.
Pour in chicken broth or wine to deglaze the pan, scraping up any browned bits.
Return sausages to the skillet and let everything simmer for 10 minutes, stirring occasionally.
Drizzle with balsamic vinegar (if using) and garnish with fresh parsley before serving.
