Ricardo Strawberry Shortcake is a delightful combination of buttery shortcake, sweet macerated strawberries, and fluffy whipped cream. This homemade version is easy, fresh, and absolutely delicious!
Ingredients
For the Shortcake:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cubed
3/4 cup milk
1 tsp vanilla extract
For the Strawberry Filling:
3 cups fresh strawberries, sliced
1/4 cup granulated sugar
1 tsp lemon juice
For the Whipped Cream:
1 cup heavy cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Instructions
Macerate the Strawberries: Mix strawberries, sugar, and lemon juice. Let sit for 30 minutes.
Make the Shortcake: Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Add milk and vanilla. Stir until combined.
Bake the Shortcake: Shape dough into circles, bake at 400°F (200°C) for 15-18 minutes, then let cool.
Whip the Cream: Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
Assemble: Slice shortcakes, layer with strawberries and whipped cream, and serve immediately.
