Description

These healthy sourdough apple cinnamon muffins are a perfect balance of natural sweetness and gut-friendly goodness. Made with an active sourdough starter, whole wheat flour, and natural sweeteners, they are light, fluffy, and packed with warm cinnamon flavor. Wet Ingredients:

  • 1 cup active sourdough starter
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup or honey
  • 1 egg (or flax egg for a vegan option)
  • ¼ cup coconut oil or melted butter
  • 1 teaspoon vanilla extract

Dry Ingredients:

 

  • 1 ½ cups whole wheat or spelt flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • 1 cup diced apples (any variety)

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Mix wet ingredients: In a large bowl, whisk together the sourdough starter, applesauce, maple syrup, egg, oil, and vanilla extract.
  • Mix dry ingredients: In a separate bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  • Combine everything: Slowly fold the dry ingredients into the wet mixture, stirring gently until combined. Fold in the diced apples.
  • Fill muffin cups: Spoon batter into the muffin tin, filling each about ¾ full.
  • Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.

 

  • Cool & Enjoy: Let muffins cool in the tin for 5 minutes, then transfer them to a wire rack.
