For the cupcakes:
- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 cup granulated sugar
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ½ cup buttermilk
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup hot water
- ¾ cup chopped cherries (fresh or canned)
For the ganache topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 1 tbsp butter
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Line a cupcake tray with liners.
- Mix Dry Ingredients: In a bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, beat eggs, buttermilk, oil, and vanilla. Slowly add in hot water.
- Make Batter: Gradually mix the dry ingredients into the wet mixture until smooth. Fold in chopped cherries.
- Bake: Fill cupcake liners ¾ full and bake for 18–20 minutes or until a toothpick comes out clean. Let cool.
- Prepare Ganache: Heat heavy cream until hot but not boiling. Pour over chocolate chips and let sit for a minute, then stir until smooth. Add butter and mix well.
- Assemble: Once cupcakes are cool, dip tops into ganache or drizzle over. Let set before serving.
