Ingredients

  • 4 center-cut pork chops (¾ inch thick)

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • ½ cup milk (plus more for gravy)

  • Salt and black pepper to taste

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 6 slices bacon

  • 2 tbsp flour (for gravy)

  • 2 tbsp bacon drippings

  • Oil for frying (vegetable or canola)


Instructions

  • Pat pork chops dry and season with salt, pepper, garlic powder, and paprika.

  • Prepare three bowls: one with flour, one with eggs and milk, one with flour again.

  • Dredge pork chops in flour, then egg, then back in flour.

  • Heat oil in skillet to 350°F. Fry each chop 4–5 minutes per side until golden.

  • Cook bacon separately, reserve drippings.

  • For gravy: whisk flour into bacon drippings, cook until golden, then slowly whisk in 1½ cups milk.

  • Stir in crumbled bacon, season to taste.

 

  • Serve gravy over hot pork chops.
