- 2 ¼ tsp active dry yeast
- 1 ½ cups warm water
- ½ cup sugar
- 1 tsp salt
- 2 eggs
- 1 cup evaporated milk
- 7 cups all-purpose flour
- ¼ cup unsalted butter, melted
- Oil for frying
- Powdered sugar for topping
Instructions
- In a large bowl, dissolve yeast in warm water. Let sit for 5 minutes.
- Add sugar, salt, eggs, and evaporated milk. Mix well.
- Gradually add flour, mixing in melted butter last. Knead until smooth.
- Cover dough and let it rise for 2 hours.
- Roll out dough and cut into squares.
- Heat oil to 350°F and fry beignets until golden brown.
- Drain and dust with powdered sugar. Serve warm.
